Mediterranean Rotini

Ingredients

  • One box of Chef's Kiss Pasta

  • 2 cups grape tomatoes or cherry tomatoes (sliced in half) 

  • 1 can artichoke hearts (14 ounces) drained cut into quarters

  • 1 jar (6 ounces) of kalamata olives cut in half 

  • 6 mini bell peppers cut into long thin pieces (the more colors the better!) 

  • ¼ cup chicken broth 

  • 4 cloves garlic minced

  • 3 tablespoons good-quality olive oil

  • 1/2 teaspoon ground black pepper

  • 1/4-1/2 teaspoon crushed red pepper flakes

  • 1 tablespoon kosher salt or himalayan salt (plus more to add to your liking) 

  • 1 lemon (juiced) 

  • 1/4 cup feta cheese 

  • 1/4 cup fresh Italian parsley chopped

The how to:

STEP 1 :

Gather all your ingredients together. Make sure everything is chopped and ready to go! Then bring a large pot of water with salt to boil. Cook the Chef's Kiss Pasta in a large pot of boiling salted water (5-7 mins), stir immediately and expect a bit of foam.

STEP 2:

While the water is heating and the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the peppers, tomatoes, garlic, 1 tbsp salt, pepper, and crushed red pepper flakes and stir frequently. Once the garlic is fragrant, and the tomatoes begin to release their juices, toss the cooked Chef’s Kiss Pasta into the skillet. Then mix in the chicken broth, artichokes and olives into the skillet and continue to stir while it cooks for another 1-2 mins.

STEP 3: 

Taste the dish and adjust the salt and pepper to your liking. Remove from heat and mix in the feta cheese and chopped parsley and voila! Enjoy!
